scrambled eggs with shrimp

when i (priscilla) used to work in central, there was one lunch spot that i frequented on a weekly basis. it’s located in one of the small alleys off of des voeux road, towards sheung wan. it’s a tiny restaurant that cooks up delicious scrambled eggs with meat, served on a plate of rice. the popular one is eggs with char siu, but i prefer with shrimp instead. during lunch, you can expect to sit elbow to elbow with random hungry strangers starving for food on their short break. now that i don’t work in hong kong anymore, i still crave that comforting, yet simple combination.

eggs 6
peeled raw shrimp 20
salt 1/2 tsp
oil 2 tbsp
shaoxing cooking wine 1 tbsp

  • crack the eggs into a bowl, add the salt and cooking wine and whisk everything
  • in a pan, add the oil and cook the shrimp on high heat for a few min until meat turns orange and slightly curled
  • add the eggs, gently stirring regularly, and cook for about 3-4 min until eggs are done
  • top with chopped green onions and drizzle with soy sauce (optional)
